Jaboticaba Caipirinha


This video from www.mapadacachaca.com.br teaches you a caipirinha variation using jaboticaba. 
Jaboticaba is one of those fruits found in every brazilian backyard but seldom in supermarkets. Jaboticaba is known in botanical books as  myrciaria cauliflora. 
This video explains nicely each ingredient, beginning with the cachaça brand Santo Mario. Santo Mario is aged in oak barrels a process that while soften its taste with notes of vanilla also gives the spirit this nice light brown colour. It would be very difficult, I suppose, to find jaboticabas outside Brazil, so, don't forget when you visit this country to ask for this jaboticaba drink.  Hope you enjoy.

Brown sugar and lots of ice

Don't be fooled by his nice shirt, he did a good job even using brown sugar and too much ice. The glass is larger than usual and he has to measure the cachaça dose.

This two nice ladies explain for their friend Jim how to prepare a caipirinha. I was thinking to include this in the nice try category, but besides the wrong lime slicing they did all correctly. I will not categorize the english translation. So make sure you use limes (green) and not lemons (yellow).

This is not a caipirinha in strict sense, but he uses the base of the recipe to make a nice drink.

**** Caipirinha with a taste of Gin!

This recipe has a little detail intersting. He put a tea spoon of gin before smashing the ice, to reduce lime bitterness. He also advises against too much ice, ´only 3 ice cubes´.

Too much sugar is an option. Notice two things, first he used a bowl to smash lime, this is usefull whe the glass is thin and could not support the smashing procedure. Second, the way he used two glasses to shake the drink.

Very good recipe. Two details to pay attention. First the way he slices lime, with thin slices and avoiding top and botton. Also he takes out the center white. Second point is ice, he uses large ice cubes instead of crushed ice that way the cachaça do not mix with water and the drink is stronger.

What I notice is the way he cut the limes, correctly taking out top and botton and center stripe, but he do not cut the lime in eight part as usual. Too much sugar and too much crushed ice in my opinion. Crushed ice is good to pour cachaça over it but too much will melt quickly and the drink will be soft, may be for ladies.
